On track, the sensor heat-soaks, typically when in the pits, which then reports temperatures far higher than the air the engine is actually ingesting. Once the reading climbs past the ECU's threshold, it pulls timing and boost, and you feel the car go flat after a few hard laps. This affects completely stock cars as well as tuned ones.
